My niece, Rosalyn, could not wait to be a special guest on Nicki Lee Bakes. I let her pick the theme (she loves Moana), and then we made a cake that looked good, but was still easy enough for her to make with me. This is what we created! It’s a super simple cake to bake with your kids, and if you’re feeling like you want a good laugh, you’ll definitely want to watch the video, too. 🙂
Easy Moana Cake
An easy Moana-themed boxed cake with simple decorations that you can create with your kids!
- 1 box cake mix (choose any flavor you like)
- 3-4 cups buttercream (choose any flavor for this as well - just make sure the color is white)
- Pink and blue food coloring
- Red sprinkles
- Icing spatula
- 2 9-inch cake pans
- Cake board (or a plate)
- Moana symbol, printed on paper and cut out
For the Cake
Prepare your cake mix according to its directions.
Grease your two 9-inch cake pans with butter.
Divide the batter evenly into both pans.
Put two drops of pink food coloring into each pan and use a butter knife to stir it in until the batter is covered in pink swirls.
Bake the cakes according to the directions on the box.
For the Frosting
Divide the buttercream evenly into two separate bowls, leaving about ½ cup behind.
Use the blue food coloring to dye each bowl. Put ½ drop into the first bowl and stir to make a light blue. Put two drops into the other bowl and stir to make a darker blue.
Assemble the Cakes
Once the cakes are baked and fully cooled, remove them from the pans. Level them if desired.
Put a dab of frosting onto the cake board and center the first cake on top.
Use your icing spatula to spread the ½ cup of white buttercream over entire top surface of the cake, then place the second cake on top.
Create a crumb coat with whatever frosting color you desire, then chill for 20 minutes.
Use your darker blue frosting to cover the bottom half of the cake, then cover the top half with the lighter blue.
Use your spatula or spoon to create ‘waves’ in your icing all over the cake.
While the icing is still wet, place the symbol cut-out on top of the cake, centered.
Carefully sprinkle the red sprinkles all over the surface of the cut-out, using a knife to clean up any messy edges.
Gently remove the paper, and that’s it!
